Country Club of Roswell is seeking a qualified Sous Chef to help operate its Fine Dining, Banquet, and Casual Dining venues. The successful candidate will be a proven leader with the ability to consistently train, mentor, and motivate a large team. The ultimate goal is to increase member and guest satisfaction in all of the dining venues. Food quality, consistency, menu variety, speed of service, and presentation are vital areas of focus. Expected to take ownership of the operation and be committed to excellence daily and maintain a sense of urgency at all times.
General Job Duties:
- A hands-on working chef that leads by example while managing, motivating, and leading the back-of-house staff and operations.
- Works closely with Executive Chef and front-of-house staff to ensure quality, consistency, and innovation in the delivery of all culinary services, products, and offerings to the members and their guests.
- Responsible for all food production in restaurants and banquets. Develops seasonal menus, creates food purchase specifications and recipes, supervises production staff, develops and monitors departmental food and labor budgets, and maintains the highest food quality and sanitation standards.
- The Executive Sous Chef will help create and update menus often, incorporating features and developing and documenting recipes and controls to ensure consistency. Menu planning will require creativity to meet current dining trends, while also offering traditional menu items in order to meet the varied demands of the diverse membership.
- The Executive Sous Chef is a team builder who mentors kitchen staff and develops a pipeline of talented and creative individuals by building on its reputation as an excellent learning and training ground for those who wish to pursue the culinary field.
- Treats all staff with respect and dignity, valuing each person for the unique strengths they bring, while also holding all staff accountable for maintaining the high culinary standards required.
- Ensures that a positive working atmosphere is maintained throughout all food and beverage operations. Works closely with the Executive Chef, Food and Beverage Director, and the Catering Director to ensure total alignment of all banquet and ala carte dining operations.
- The Executive Sous Chef should be comfortable conversing and interacting in both the front of the house and the back of the house.
- Capable of interacting with a diverse membership of all ages, learning members’ names and dining preferences.
- Must engage with the membership by walking through the dining rooms and being visible during all special events, as well as organizing special member dining opportunities such as cooking demonstrations, wine dinners, and pop-up theme types of events.
- Responsive to members’ allergies, dietary needs, and special requests, and strives to find creative ways to accommodate these challenges.
- Evaluate and set appropriate and necessary standards of operation, execution, and delivery within culinary operation; taking complete ownership for the entire dining experience from production to timing to final delivery of end product, while collaborating with the FOH.
- Attends weekly department staff meetings, conducts daily pre-shift meetings and manages the employee meal program.
- Achieves the objectives set by the Executive Chef through the creation of kitchen policies and procedures. Recruits and hires culinary staff evaluates the performance of staff and rewards and disciplines staff in a fair and respectful manner.
Candidate Qualifications:
- Have a minimum of five years of supervisory experience in kitchen operations
- A private Club or resort experience is helpful, but not required
- Experience in high-end a la carte and banquet settings
- Must be certified in food safety and sanitation
- Verifiable and successful work history
- Be of high moral fiber with unquestionable personal traits and a strong work ethic
Physical Demands and Work Environment:
- Required to stand for long periods of time, walk, climb stairs, balance, stoop, kneel, crouch, bend, stretch, twist, and reach; work in a hot, humid, and noisy environment
- Push, pull or lift up to 50 pounds; continuous repetitive motions
- Places great importance on staff communications and interaction. Leads by example.
